In the last 12 months, one of the "tourist taxes" that has been levied on to travelers is a room tax. Granted, it is only a few euro per night, but with a stay of a week or 10 days, it could come up to an amount that because just an annoyance to pay. I have found that if you approach the desk clerk in the hotel (especially at smaller, owner-operated hotes) they may be willing to waive or reduce that tourist tax if the entire bill is paid in advance.
The other more annoying "tourist tax" is il coperto, or a cover charge to eat in a restaurant. Supposedly, this is to cover the charge of bread and perhaps the cleaning of the linens. But when I was charged a 2 euro coperto for sitting down in Siena for a 6 euro glass of wine, I just could not see the justification of it. We have been in restaurants where the coperto was as little as 1 euro and as high as 20% of the bill.
However, the coperto is negotiable. I have learned (the hard way) is that before I sit down at a table in Italy, I ask if there is indeed a cover charge (not all restaurants have one, it is not mandatory). If there is a cover charge, I explain that I will go to another place that does not have one. Usually the owner of the restaurant will rescind or reduce the cover charge. But in any case, make sure you clarify it with the restaurant beforehand.

It exceeed my expectations in that it is more romantic than I could have possibly imagined. Venice is one of those unique places on earth because it really is a city built into the sea.
